
This light, mayonnaise-free Waldorf salad is perfect for those looking to reduce their saturated fat intake while still enjoying a fresh, crunchy, and satisfying meal. Ingredients
Vinaigrette
- 30 ml (2 tbsp) 2% plain yogurt (or store-bought tzatziki)
- 15 ml (1 tbsp) apple cider vinegar (or lemon juice)
- 7.5 ml (½ tbsp) whole grain mustard
- 5 ml (1 tsp) maple syrup
- Pepper and salt, to taste
Salad
- 1.5 L (6 cups) mixed lettuce
- 3 celery stalks, chopped
- 2 apples, thinly sliced
- 310 ml (1 ¼ cups) grapes, halved
- 80 ml (⅓ cup) walnuts, coarsely chopped
Preparation
- In a large bowl, whisk together the yogurt, vinegar, mustard, and maple syrup. Season to taste.
- Add lettuce, celery, apples, grapes, and walnuts. Toss to coat all ingredients with the dressing.
Notes
Keeps for 2 days in the refrigerator, with the dressing stored separately in an airtight container.
To make it a full meal, add grilled chicken cubes, roasted tofu, or canned legumes.
If preparing in advance, store the dressing separately and toss the apple slices with lemon juice to prevent browning.
