Ingredients

Vinaigrette

  • 30 ml (2 tbsp) 2% plain yogurt (or store-bought tzatziki)
  • 15 ml (1 tbsp) apple cider vinegar (or lemon juice)
  • 7.5 ml (½ tbsp) whole grain mustard
  • 5 ml (1 tsp) maple syrup
  • Pepper and salt, to taste

Salad

  • 1.5 L (6 cups) mixed lettuce
  • 3 celery stalks, chopped
  • 2 apples, thinly sliced
  • 310 ml (1 ¼ cups) grapes, halved
  • 80 ml (⅓ cup) walnuts, coarsely chopped

Preparation

  1. In a large bowl, whisk together the yogurt, vinegar, mustard, and maple syrup. Season to taste.
  2. Add lettuce, celery, apples, grapes, and walnuts. Toss to coat all ingredients with the dressing.

Notes

Keeps for 2 days in the refrigerator, with the dressing stored separately in an airtight container.

To make it a full meal, add grilled chicken cubes, roasted tofu, or canned legumes. 

If preparing in advance, store the dressing separately and toss the apple slices with lemon juice to prevent browning.
