Pizza with Tempeh and Grilled Vegetables

Ingredients

  • 1/4 commercial pizza dough
  • 2.5 mL (1/2 teaspoon) olive oil
  • 10 mL (2 teaspoon) Dijon mustard
  • 5 mL (1 teaspoon) honey
  • A pinch of herbs de Provence
  • 3 ½ oz (100 g) tempeh, cubed
  • 1/4 zucchini, diced
  • 1/4 bell bell pepper, diced
  • Pepper and salt
  • 30 mL (2 tablespoon) tomato coulis
  • 30 mL (2 tablespoon) grated Emmental cheese

 

  • 250 mL (1 cup) red leaf lettuce
  • 2 radishes, sliced
  • 2.5 mL (1/2 teaspoon) olive oil
  • 2.5 mL (1/2 teaspoon) wine vinegar

Preparation

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine oil, mustard, honey, herbs, tempeh cubes, diced zucchini and bell pepper, Pepper and salt.
  3. Place pizza dough on a baking sheet covered with baking paper.
  4. Spread the tomato coulis on the dough and arrange the vegetable filling.
  5. Garnish with cheese.
  6. Bake for about 15 minutes or until pastry is cooked and cheese is golden brown.
