1 block (454 g) of firm tofu

1 peach, washed and chopped

500 ml (2 cups) frozen diced mango

125 ml (½ cup) light coconut milk

60 ml (¼ cup) maple syrup

1 scoop vanilla protein powder

5 ml (1 tsp) vanilla extract

A pinch of salt

Preparation
- In a food processor, combine all the ingredients and blend until smooth and creamy, about 5 minutes.
- Divide the mousse into dessert bowls and top with your choice of garnishes before serving.
