A simple and quick coulis to prepare, perfect for topping yogurt, cakes or pancakes. This version highlights the natural flavour of strawberries, enhanced with a touch of maple syrup. Ingredients

  • 1 L (4 cups) of frozen strawberries*
  • 30 ml (2 tbsp) of maple syrup
  • 7.5 ml (½ tbsp) of vanilla extract

Preparation

  1. In a saucepan, place the strawberries and maple syrup.
  2. Heat over medium heat and bring to a boil.
  3. Reduce to low heat and let simmer for 8 to 10 minutes, until the strawberries are tender. Add the vanilla extract.
  4. Using a blender, purée until smooth.
  5. Let cool slightly before serving or transfer to the refrigerator in airtight containers.

Notes

Keeps for 5 days in the refrigerator in an airtight container.

*Can be made with any berries.
