Ingredients
- 5 ml (1 tsp) olive oil
- ½ small onion, chopped
- 1 clove garlic (5 ml / 1 tsp), chopped
- 250 ml (1 cup) spinach
- 180 ml (¾ cup) canned artichoke hearts, coarsely chopped
- 180 ml (¾ cup) unsweetened almond beverage
- 125 ml (½ cup) 5% M.F. cream
- 80 ml (⅓ cup) light mozzarella cheese, grated
- 60 ml (¼ cup) nutritional yeast
- 30 ml (2 tbsp) lemon juice
- Pepper and salt, to taste
- 45 ml (3 tbsp) dry textured vegetable protein (TVP)
Preparation
- Preheat the oven to 350 °F (180 °C).
- In a large nonstick skillet, heat the oil over medium-high heat. Add the onion and garlic, then cook for 1 to 2 minutes.
- Add the spinach, artichoke hearts, almond beverage, cream, cheese, nutritional yeast, and lemon juice. Mix and cook for 5 minutes. Season to taste.
- In a blender, process the textured vegetable protein into a fine crumb.
- In a medium oven-safe dish, pour in the mixture and sprinkle with the textured vegetable protein. Cover. Bake in the center of the oven for 10 minutes.
- Remove the cover, then continue cooking on broil for 2 to 3 minutes.
- Serve hot with crackers, fresh vegetables, or fresh bread.
