Ingredients

  • 5 ml (1 tsp) olive oil
  • ½ small onion, chopped
  • 1 clove garlic (5 ml / 1 tsp), chopped
  • 250 ml (1 cup) spinach
  • 180 ml (¾ cup) canned artichoke hearts, coarsely chopped
  • 180 ml (¾ cup) unsweetened almond beverage
  • 125 ml (½ cup) 5% M.F. cream
  • 80 ml (⅓ cup) light mozzarella cheese, grated
  • 60 ml (¼ cup) nutritional yeast
  • 30 ml (2 tbsp) lemon juice
  • Pepper and salt, to taste
  • 45 ml (3 tbsp) dry textured vegetable protein (TVP)

Preparation

  1. Preheat the oven to 350 °F (180 °C).
  2. In a large nonstick skillet, heat the oil over medium-high heat. Add the onion and garlic, then cook for 1 to 2 minutes.
  3. Add the spinach, artichoke hearts, almond beverage, cream, cheese, nutritional yeast, and lemon juice. Mix and cook for 5 minutes. Season to taste.
  4. In a blender, process the textured vegetable protein into a fine crumb.
  5. In a medium oven-safe dish, pour in the mixture and sprinkle with the textured vegetable protein. Cover. Bake in the center of the oven for 10 minutes.
  6. Remove the cover, then continue cooking on broil for 2 to 3 minutes.
  7. Serve hot with crackers, fresh vegetables, or fresh bread.
