Ingredients
- 500 g (about 2 tubs) store-bought hummus (or homemade hummus)
- 1 fresh tomato, finely diced
- 30 ml (2 tbsp) oil-packed sun-dried tomatoes, drained and chopped
- 30 ml (2 tbsp) light feta cheese, crumbled
- 30 ml (2 tbsp) fresh cilantro, chopped (or parsley)
- 1 green onion, thinly sliced
Preparation
- On a large serving plate, spread the hummus into a ring shape about 3 to 4 cm thick.
- Top evenly with fresh tomatoes, sun-dried tomatoes (if using), green onion, feta, and cilantro.
- Serve with crackers, raw vegetables and/or warm pita wedges.
Notes
Keeps for 3 days in the refrigerator in an airtight container.
Leftovers make a great sandwich spread or used as a bowl topping.
