Green Beans with Lemon, Herbs & Parmesan (Low FODMAP)

Ingredients

  • 1L (4 cups) green beans
  • 65 ml (1/4 cup) pumpkin seeds
  • 65 ml (1/4 cup) grated fresh Parmesan cheese
  • 65 ml (1/4 cup) fresh basil, chopped
  • 5 ml (1 teaspoon) herbes de Provence (see note)
  • Juice of 1 lemon (or 60 mL / 1/4 cup)
  • 30 mL (2 tablespoons) garlic-infused olive oil
  • Pepper and salt to taste

Note | Can be replaced by basil, oregano or dried tarragon

Preparation

  1. Bring a large pot of water to a boil, then cook the green beans for 2 to 3 minutes. Drain and set aside.
  2. In a large bowl, mix the remaining ingredients.
  3. Add the cooked green beans and mix again.

Serve with Orange Chicken or low FODMAP Greek Tofu Skewers.
