Ingredients
Bruschetta
- 1 small tomato, diced
- 15 ml (1 tbsp) white onion, finely diced (about ⅛ of an onion)
- Fresh basil, chopped, to taste
- 1 clove garlic, minced
- 2.5 ml (½ tsp) balsamic vinegar
- 2.5 ml (½ tsp) olive oil
- Salt and pepper, to taste
Toast
- 2 tranches de pain multigrain, grillées*
- 60 ml (¼ tasse) de fromage cottage 0 % M.G.
Preparation
- In a small bowl, combine all the bruschetta ingredients.
- Top the toasted bread with cottage cheese (approx 2 tbsp each)
- Garnish each toast with the bruschetta mixture and enjoy!
Notes
The bruschetta mixture keeps for 4 days in the refrigerator. Does not freeze well.
