Ingredients

  • 2-3 potatoes, cut into cubes

  • 2 leeks, cut into rings

  • 2 bell peppers of various colors, diced

  • 1 medium sweet potato, cut into cubes

  • 1 zucchini, cut into cubes

  • 10 ml (2 tsp) of vegetable oil

  • 2.5 ml (½ tsp) of paprika

  • Salt and pepper

  • 600 g (1.5 lb) of fresh salmon

Salmon Sauce

  • 75 ml (¼ cup + 1 tbsp) of chili sauce

  • 45 ml (3 tbsp) of balsamic vinegar

  • 22 ml (1½ tbsp) of maple syrup

  • 15 ml (1 tbsp) of reduced sodium soy sauce

  • 5 ml (1 tsp) of garlic powder

  • 2.5 ml (½ tsp) of smoked paprika

  • 2.5 ml (½ tsp) of onion powder

  • 2.5 ml (½ tsp) of hot sauce (such as Red Hot or Sriracha)

Preparation

  1. Preheat the oven to 375°F (190°C). Prepare a baking sheet lined with parchment paper.

  2. Spread the vegetables on the sheet and pour the oil, add the paprika, salt, and pepper, and bake for about 30 minutes.

  3. Meanwhile, prepare the sauce by mixing all the ingredients. Set aside.

  4. After 30 minutes of cooking, take out the sheet and add the salmon, drizzle with the sauce, and return to the oven for another 15 minutes or until the vegetables are tender, and the salmon is cooked to your taste.

Notes

Keeps for 2 days in the refrigerator in an airtight container or 2 months in the freezer.
