Ingredients

  • 60 ml (¼ cup) chia seeds

  • 125 ml (½ cup) water

  • 500 ml (2 cups) fresh raspberries

  • 90 ml (6 tbsp) natural peanut butter (or other nut butter)

  • 150 g (5 oz) 70% dark chocolate

Preparation

  1. In a bowl, mix the chia seeds with water and let sit for 10 minutes.
  2. Meanwhile, in a medium bowl, mash the raspberries with a fork, then incorporate them into the soaked chia seed mixture.
  3. On a baking sheet lined with wax paper, drop spoonfuls (about 2 tbsp each) of the raspberry mixture.
  4. Stir the peanut butter until it is sufficiently liquid, then gently place spoonfuls on the raspberry bites.
  5. Freeze for at least 30 minutes.
  6. Once the bites are solidified, melt the chocolate in a medium microwave-safe bowl for 40 to 60 seconds, stirring every 20 seconds with a fork.
  7. Using a fork, dip each portion into the melted chocolate, ensuring they are well coated, then place them back on the baking sheet.
  8. Return the sheet to the freezer and let rest for at least 1 hour, or until the chocolate is solidified.

Notes

Store in an airtight container in the freezer for up to 7 months.
