- 250 ml (1 cup) sweetened applesauce
- 250 ml (1 cup) vanilla Greek yogurt, 0% M.F.
- 3 eggs
- 5 ml (1 tsp) vanilla extract
- 185 ml (¾ cup) whole wheat flour
- 60 ml (¼ cup) brown sugar
- 15 ml (1 tbsp) ground flaxseeds
- 5 ml (1 tsp) ground cinnamon
- 5 ml (1 tsp) baking powder
- 2 medium apples, diced
Preparation
- Preheat the oven to 350 °F (180 °C).
- In a large bowl, mix the applesauce, yogurt, eggs, and vanilla until smooth.
- In a small bowl, combine the flour, brown sugar, flaxseeds, cinnamon, and baking powder. Gradually incorporate the dry ingredients into the wet mixture.
- Fold in the diced apples gently.
- Pour the batter into a 20 cm (8 in) square baking pan lined with parchment paper.
- Bake for 50 minutes, or until a toothpick inserted in the centre comes out clean.
