- 30 ml (2 tbsp) milk
- 15 ml (1 tbsp) unsweetened applesauce
- 15 ml (1 tbsp) sugar
- Zest and juice of ½ lemon
- 30 g (¼ cup) unbleached all-purpose flour*
- 2,5 ml (½ tsp) baking powder
*For a gluten-free option, replace the flour with a 1:1 gluten-free all-purpose mix.
Preparation
- In a mug, whisk together the milk, applesauce, sugar, lemon zest and juice with a fork until smooth.
- Add the flour and baking powder. Gently stir until the batter is smooth.
- Microwave on high for 2 minutes, watching closely to avoid overcooking.
Notes
