Ingredients

  • 30 ml (2 tbsp) milk
  • 15 ml (1 tbsp) unsweetened applesauce
  • 15 ml (1 tbsp) sugar
  • Zest and juice of ½ lemon
  • 30 g (¼ cup) unbleached all-purpose flour*
  • 2,5 ml (½ tsp) baking powder

*For a gluten-free option, replace the flour with a 1:1 gluten-free all-purpose mix.

Preparation

  1. In a mug, whisk together the milk, applesauce, sugar, lemon zest and juice with a fork until smooth.
  2. Add the flour and baking powder. Gently stir until the batter is smooth.
  3. Microwave on high for 2 minutes, watching closely to avoid overcooking.

Notes

For an irresistible finishing touch, add a light dusting of icing sugar and a few lemon zest strands!
