Ingredients

  • 12 large cooked shrimp (size 31-40/lb), sliced lengthwise*
  • 1 mango, cubed
  • 250 ml (1 cup) cherry tomatoes, halved
  • 1 avocado, cubed
  • ¼ red onion, thinly sliced
  • 60 ml (¼ cup) chopped cilantro
  • The juice of ½ lime (or 15 ml (1 tbsp))
  • 15 ml (1 tbsp) olive oil
  • 1.5 ml (¼ tsp) salt
  • Tajin seasoning, to taste

Preparation

  1. In a large salad bowl, combine all ingredients.
  2. Toss gently and serve immediately.

Notes

Keeps for up to 4 days in the refrigerator in an airtight container. Do not freeze.

*You can cook the shrimp as preferred (pan-seared or boiled for 5 minutes), or substitute with another protein such as grilled chicken or tofu.
