Ingredients
- 12 large cooked shrimp (size 31-40/lb), sliced lengthwise*
- 1 mango, cubed
- 250 ml (1 cup) cherry tomatoes, halved
- 1 avocado, cubed
- ¼ red onion, thinly sliced
- 60 ml (¼ cup) chopped cilantro
- The juice of ½ lime (or 15 ml (1 tbsp))
- 15 ml (1 tbsp) olive oil
- 1.5 ml (¼ tsp) salt
- Tajin seasoning, to taste
Preparation
- In a large salad bowl, combine all ingredients.
- Toss gently and serve immediately.
Notes
Keeps for up to 4 days in the refrigerator in an airtight container. Do not freeze.
*You can cook the shrimp as preferred (pan-seared or boiled for 5 minutes), or substitute with another protein such as grilled chicken or tofu.
