Ingredients

  • 60 ml (¼ cup) non-hydrogenated margarine

  • 30 ml (2 tbsp) brown sugar

  • 1 egg

  • 5 ml (1 tsp) vanilla extract
     

  • 185 ml (¾ cup) whole wheat flour

  • 125 ml (½ cup) almond flour

  • 7.5 ml (½ tbsp) baking powder

  • 1 ml (¼ tsp) salt
     

  • 60 ml (¼ cup) unsweetened vanilla almond milk

  • 60 ml (¼ cup) 0% plain Greek yogourt
     

  • 1 L (4 cups) diced peaches (about 6 peaches)

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, use an electric mixer to cream the margarine and brown sugar. Add the egg and vanilla.
  3. Gradually mix the dry ingredients into the creamed mixture, alternating with the almond milk and Greek yogourt.
  4. Place the diced peaches at the bottom of a 20 x 20 cm (8 x 8-inch) baking dish, then pour the batter on top.
  5. Bake for about 40 minutes, or until a knife inserted into the batter comes out clean. Serve warm.

Notes

Keeps for 5 days in the refrigerator in an airtight container. Freezes for up to 3 months.
