Ingredients
- 250 ml (1 cup) plain Greek yogurt, 0% M.F
- 60 ml (¼ cup) natural peanut butter
- 5 ml (1 tsp) vanilla extract
- 15 ml (1 tbsp) chia seeds
- 1 banana, sliced
- 60 g (2 oz), dark chocolate, 85%, roughly chopped
Preparation
- In a medium bowl, combine the yogurt, peanut butter and vanilla extract.
- Spread the mixture onto a baking sheet lined with parchment paper, creating an even layer about 0.5 to 1 cm thick.
- Sprinkle with chia seeds and place the banana slices evenly on top. Freeze for 10 minutes.
- Meanwhile, melt the chocolate in the microwave in 30-second intervals, stirring after each, until smooth.
- Remove the bark from the freezer and drizzle the melted chocolate over the surface. Return to the freezer and freeze for 2 hours or until completely solid.
- Crack with your hands before serving.
