Ingredients

  • 2 cups (500 ml) cherry tomatoes, halved lengthwise

  • 2 cans of 14 oz (398 ml) hearts of palm, sliced in rounds

  • ¼ red onion, diced 

  • 30 ml (2 tbsp) pesto 

  • 1-2 garlic cloves

  • 10-15 basil leaves, roughly chopped 

  • 30 ml (2 tbsp) pine nuts 

  • Pepper, to taste 

  • Sumac, to taste 

Preparation

  1. In a medium bowl, gently mix the cherry tomatoes, hearts of palm, red onion, pesto, and garlic.
  2. Garnish with the torn basil leaves, pine nuts, a dash of pepper, and sumac to taste.

Notes

Can be refrigerated 3-4 days, cannot be frozen.
