Ingredients
- 125 ml (½ cup) frozen or fresh berries
- 15 ml (1 tbsp) chia seeds
- 1 slice of whole grain bread, toasted
- 60 g (2 oz) goat cheese, 12% M.F.
- Thyme leaves, to taste
Preparation
- In a small microwave-safe bowl, microwave the frozen berries for 1-2 minutes until tender and juicy. Stir in the chia seeds and let sit for a few minutes to form a jam-like topping.
- Spread the toasted bread with goat cheese, add the berry mixture, and sprinkle with fresh thyme leaves.
