Ingredients

  • 125 ml (½ cup) frozen or fresh berries 
  • 15 ml (1 tbsp) chia seeds
  • 1 slice of whole grain bread, toasted
  • 60 g (2 oz) goat cheese, 12% M.F.
  • Thyme leaves, to taste

Preparation

  1. In a small microwave-safe bowl, microwave the frozen berries for 1-2 minutes until tender and juicy. Stir in the chia seeds and let sit for a few minutes to form a jam-like topping.
  2. Spread the toasted bread with goat cheese, add the berry mixture, and sprinkle with fresh thyme leaves.

Notes

The jam can be kept for 4 days in the refrigerator. Do not freeze.
