Ingredients

  • 500 ml (2 cups) of fresh or frozen blueberries* 

  • 250 ml (1 cup) of plain 2% Greek yogurt 

  • 15 ml (1 tbsp) of chia seeds 

  • 5 ml (1 tsp) of vanilla extract 

  • 375 ml (1 ½ cups) of dark chocolate chips (or crushed chocolate pieces)

  • 30 ml (2 tbsp) of coconut oil

  • Crushed nuts of choice

Preparation

  1. In a medium bowl, mix the Greek yogurt, chia seeds, and pure vanilla extract.
  2. Stir the blueberries into the yogurt mixture, tossing gently to coat them evenly.
  3. On a baking sheet lined with parchment paper, drop small clusters of the coated blueberries using a spoon.
  4. Place the baking sheet in the freezer for 60 minutes, or until the yogurt coating is completely firm and solid.
  5. In a medium microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in the microwave for 40 to 60 seconds, stopping to stir every 20 seconds with a fork until smoothly melted.
  6. Using two forks, dip each frozen blueberry cluster quickly into the melted chocolate to coat it completely.
  7. Sprinkle the crushed pistachios immediately over the wet chocolate so they stick.
  8. Return the clusters to the freezer for 10 minutes to let the chocolate shell set completely before serving or storing.

Notes

Keep in an airtight container in the freezer for up to 1 month.

* Blueberries can be replaced by your favourite fruits. For an even more nutritious and local option, you can substitute fresh haskaps for the blueberries.
