Ingredients
- 500 ml (2 cups) radishes, sliced
- 125 ml (½ cup) fresh or frozen fava beans, shelled
- 45 ml (3 tbsp) fresh mint, chopped
- 45 ml (3 tbsp) fresh parsley, chopped
- 30 ml (2 tbsp) ground chia seeds
- 15 ml (1 tbsp) fresh dill, chopped
- Juice of ½ lime (15 ml / 1 tbsp), freshly squeezed
- 15 ml (1 tbsp) olive oil
- 1 clove garlic (5 ml / 1 tsp), chopped
- Pepper and salt, to taste
Preparation
- In a small saucepan of boiling water, cook the beans for 5 minutes, until tender.
- Drain, then rinse immediately under cold water to stop the cooking. Drain well. In a large bowl, add the radishes, cooled beans, mint, parsley, dill, and chia seeds. Mix gently.
- In a small bowl, mix the lime juice, olive oil, and garlic. Season to taste.
- When ready to serve, pour the dressing over the salad and toss. Serve immediately to keep the vegetables crisp.
