Ingredients

  • 2 large eggs
  • 250 ml (1 cup) 2% M.F. cottage cheese
  • 1 ml (¼ tsp) onion powder (or garlic powder)
  • 2 ml (½ tsp) dried oregano (or Italian seasoning)
  • Pepper, to taste
  • 15 ml (1 tbsp) cornstarch

Preparation

  1. Preheat the oven to 350 °F (180 °C).
  2. In a small bowl, using an immersion blender, mix all the ingredients until smooth.
  3. On a baking sheet lined with parchment paper, pour the mixture* and gently spread it into the desired shape.
  4. Bake for 30 to 45 minutes, or until the flatbread is golden. Baking time may vary depending on your oven.
  5. Let cool slightly before cutting into pieces or using as a pizza base or wrap.

Notes

Keeps for 5 days in the refrigerator or 3 months in the freezer, in an airtight container.

*The mixture will be liquid before baking — that’s normal. It will spread naturally on the baking sheet.
