Ingredients

  • 2 large eggs

  • ¼ cup (60 ml) egg white

  • ⅔ cup (160 ml) 1% milk

  • ¼ cup (60 ml) olive oil

  • 1 cup (250 ml) whole wheat flour

  • ¾ cup (180 ml) cornstarch

  • 1 tsp (5 ml) dried oregano

  • ¼ tsp (1 ml) salt

  • Pepper to taste

  • 1 cup (250 ml) shredded light cheddar cheese

Preparation

  1. Preheat the oven to 375°F (190°C). Prepare a muffin tin with paper or silicone liners.

  2. In a bowl, whisk the eggs, then add the remaining liquid ingredients and continue whisking. Add the remaining dry ingredients, except the cheese, and whisk to incorporate the flour well. Add the cheese and mix.

  3. Divide the mixture among the silicone muffin cups and bake for 18-20 minutes, or until a toothpick comes out clean.

 

Pair with raw vegetables or fruit to make a more complete meal or snack!

Notes

Keeps for 7 days in the refrigerator or 3 months in the freezer in an airtight container.
