Ingredients

454 g (1 lb) firm tofu

½ lemon, juice and zest

45 ml (3 tbsp) maple syrup (or honey)

15 ml (1 tbsp) vegetable oil

5 ml (1 tsp) vanilla extract

15-75 ml (3-5 tbsp) water
Preparation
- In a food processor, combine all the whipped tofu ingredients. Start with just 3 tbsp of water. Blend for at least 5 minutes, scraping down the sides of the bowl. Add more water, 1 tbsp at a time, if needed to achieve a smooth and even consistency.
Notes
Keeps for 4-5 days in an airtight container.
