Ingredients

  • 454 g (1 lb) firm tofu

  • ½ lemon, juice and zest

  • 45 ml (3 tbsp) maple syrup (or honey)

  • 15 ml (1 tbsp) vegetable oil

  • 5 ml (1 tsp) vanilla extract

  • 15-75 ml (3-5 tbsp) water

Preparation

  1. In a food processor, combine all the whipped tofu ingredients. Start with just 3 tbsp of water. Blend for at least 5 minutes, scraping down the sides of the bowl. Add more water, 1 tbsp at a time, if needed to achieve a smooth and even consistency.

Notes

Keeps for 4-5 days in an airtight container.

  • A variety of fruits (strawberries, blueberries, blackberries, bananas...), chopped

  • Homemade granola

  • Jam or fruit compote

Spread Version:
