Ingredients
- 250 ml (1 cup) of 2% milk (or unsweetened fortified soy beverage)
- 160 ml (⅔ cup) of quick-cooking oats
- 60 ml (¼ cup) of pitted dried dates, chopped
- 30 ml (2 tbsp) of unsweetened shredded coconut
- 5 ml (1 tsp) of vanilla extract
- 160 ml (⅔ cup) of 0% M.F. vanilla Greek yogurt
- 30 ml (2 tbsp) of walnuts, chopped
Preparation
- In a small saucepan, place the milk, oats, dates and shredded coconut. Mix.
- Bring to a boil over medium heat, then reduce to low heat and cook for 5 minutes, stirring regularly.
- Add the vanilla extract and mix.
- Divide into two bowls.
- Top with Greek yogurt and walnuts. If needed, add more milk according to desired texture. Serve hot.
