Ingredients

  • 250 ml (1 cup) of 2% milk (or unsweetened fortified soy beverage)
  • 160 ml (⅔ cup) of quick-cooking oats
  • 60 ml (¼ cup) of pitted dried dates, chopped
  • 30 ml (2 tbsp) of unsweetened shredded coconut
  • 5 ml (1 tsp) of vanilla extract
  • 160 ml (⅔ cup) of 0% M.F. vanilla Greek yogurt
  • 30 ml (2 tbsp) of walnuts, chopped

Preparation

  1. In a small saucepan, place the milk, oats, dates and shredded coconut. Mix.
  2. Bring to a boil over medium heat, then reduce to low heat and cook for 5 minutes, stirring regularly.
  3. Add the vanilla extract and mix.
  4. Divide into two bowls.
  5. Top with Greek yogurt and walnuts. If needed, add more milk according to desired texture. Serve hot.
