Ingredients

  • 300 g (1 ⅔ cup) of frozen green peas, thawed 

  • ½ lemon, juice and zest 

  • 30 ml (2 tbsp) of olive oil 

  • 1 clove of garlic 

  • 8g of fresh mint leaves 

  • Pepper and salt, to taste

To serve (optional)

  • Feta cheese

  • Olive oil

  • Whole grain pita breads, cut into triangles and toasted 

Preparation

  1. In a food processor, place all the ingredients and puree until coarse. If needed, add water to the blender until desired consistency (1 tbsp at a time) 
  2. To serve, spread on a plate, and garnish with feta and a drizzle of olive oil, if desired.
  3. Serve with toasted pita chips 

Notes

Keeps 3 days in the refrigerator. Can be frozen up to 3 months
