Ingredients

  • 4 boneless chicken breasts, halved lengthwise
  • 30 ml (2 tbsp) fresh cilantro, finely chopped
  • 30 ml (2 tbsp) fresh ginger, finely chopped (or pickled)
  • 30 ml (2 tbsp) plain 2% yogurt
  • 15 ml (1 tbsp) honey
  • 1 garlic clove, finely chopped
  • Pepper and salt, to taste

Preparation

  1. In a large airtight container or a resealable plastic bag (such as Ziploc), combine the yogurt, cilantro, ginger, honey and garlic. Season to taste.
  2. Add the chicken pieces and coat well with the marinade.
  3. Cover and marinate in the refrigerator for at least 30 minutes, ideally 2 hours.
  4. Preheat the BBQ to medium-high heat (maximum 200 °C / 400 °F).
  5. Lightly oil the grill. Grill the chicken for 5 to 7 minutes per side, or until the internal temperature reaches 74 °C (165 °F).
  6. Serve immediately.

Notes

Keeps for 3 days in the refrigerator or 3 months in the freezer.
