Ingredients

  • 250 ml (1 cup) plain 0% Greek yogurt
  • 125 ml (½ cup) light canned coconut milk
  • 15 ml (1 tbsp) honey (or maple syrup)
  • 1 scoop (30 g) vanilla protein powder*
  • 180 ml (¾ cup) pitted cherries, quartered
  • 30 ml (2 tbsp) shelled pistachios, coarsely chopped

Preparation

  1. In a medium bowl, mix the yogurt, coconut milk, honey, and protein powder until smooth. Stir in the cherries and pistachios.
  2. Pour the mixture into popsicle molds.
  3. Insert sticks, then freeze for at least 4 hours or until fully set. To easily remove the popsicles, run the molds under warm water for a few seconds.

Notes

Keeps in the freezer for 3 months.

*The vanilla protein powder can be replaced with milk powder or omitted altogether.
