Ingredients
- 250 ml (1 cup) plain 0% Greek yogurt
- 125 ml (½ cup) light canned coconut milk
- 15 ml (1 tbsp) honey (or maple syrup)
- 1 scoop (30 g) vanilla protein powder*
- 180 ml (¾ cup) pitted cherries, quartered
- 30 ml (2 tbsp) shelled pistachios, coarsely chopped
Preparation
- In a medium bowl, mix the yogurt, coconut milk, honey, and protein powder until smooth. Stir in the cherries and pistachios.
- Pour the mixture into popsicle molds.
- Insert sticks, then freeze for at least 4 hours or until fully set. To easily remove the popsicles, run the molds under warm water for a few seconds.
Notes
Keeps in the freezer for 3 months.
*The vanilla protein powder can be replaced with milk powder or omitted altogether.
