Ingredients

  • 1 large (approx. 350 g) sweet potato
  • 60 g (2 oz) dark chocolate chips
  • 125 ml (½ cup) unsweetened almond beverage

  • 15 ml (1 tbsp) olive oil
  • Pinch of sea salt

Preparation

  1. Preheat the oven to 350°F (180°C).
  2. Wrap the whole sweet potato in a sheet of aluminium foil and bake for 45 to 60 minutes, or until it is very tender when pierced with the tip of a knife*.
  3. Leave to cool slightly, then remove the skin from the sweet potato and place the flesh directly into the container of a food processor.
  4. In a medium microwave-safe bowl, melt the dark chocolate chips with the almond beverage in 30-second intervals, stirring each time until smooth.
  5. Add the melted chocolate mixture to the sweet potato flesh in the food processor. Blend until the texture is perfectly smooth and silky.
  6. Transfer the mixture into a dish (such as a square pan or a Pyrex loaf pan) and smooth the surface.
  7. Place in the refrigerator and leave to set for at least 2 hours until the mixture completely firms up.
  8. When ready to serve, portion out with a spoon and garnish with a drizzle of olive oil and a tiny pinch of sea salt.

Notes

Keeps for 3 days in the refrigerator in an airtight container.

*To save time, you can cook the sweet potato in the microwave. Simply cut it in half, place it in a dish with a little water in the bottom, and cook on high for about 10 minutes, or until very tender.
