Ingredients
- 1 large (approx. 350 g) sweet potato
- 60 g (2 oz) dark chocolate chips
- 125 ml (½ cup) unsweetened almond beverage
- 15 ml (1 tbsp) olive oil
- Pinch of sea salt
Preparation
- Preheat the oven to 350°F (180°C).
- Wrap the whole sweet potato in a sheet of aluminium foil and bake for 45 to 60 minutes, or until it is very tender when pierced with the tip of a knife*.
- Leave to cool slightly, then remove the skin from the sweet potato and place the flesh directly into the container of a food processor.
- In a medium microwave-safe bowl, melt the dark chocolate chips with the almond beverage in 30-second intervals, stirring each time until smooth.
- Add the melted chocolate mixture to the sweet potato flesh in the food processor. Blend until the texture is perfectly smooth and silky.
- Transfer the mixture into a dish (such as a square pan or a Pyrex loaf pan) and smooth the surface.
- Place in the refrigerator and leave to set for at least 2 hours until the mixture completely firms up.
- When ready to serve, portion out with a spoon and garnish with a drizzle of olive oil and a tiny pinch of sea salt.
Notes
Keeps for 3 days in the refrigerator in an airtight container.
*To save time, you can cook the sweet potato in the microwave. Simply cut it in half, place it in a dish with a little water in the bottom, and cook on high for about 10 minutes, or until very tender.
