Ingredients
- 450 g (1 lb) boneless chicken breasts, cut into cubes
- 45 ml (3 tbsp) 0% plain yogurt
- Zest and juice of 1 lemon (or 60 ml / 1/4 cup juice)
- 15 ml (1 tbsp) olive oil
- 10 ml (2 tsp) dried oregano
- 10 ml (2 tsp) jarred minced garlic (or 2 garlic cloves, finely chopped)
- 1 pinch of salt
- Pepper, to taste
- 4 wooden skewers (or 8 small ones), soaked in water for at least 30 minutes (if grilling)
Preparation
- In an airtight container, combine all marinade ingredients with the chicken. Cover and refrigerate for at least 30 minutes.
- Thread the chicken cubes onto skewers.
- Preheat barbecue to medium-high heat and oil the grill.
- Grill skewers for 15 minutes, turning halfway through, until internal temperature reaches 165°F (74°C).
- Serve with tzatziki sauce, roasted baby potatoes or pita wedges, and Greek salad.
Notes
Keeps for 3 days in the refrigerator or 3 months in the freezer in an airtight container.
To bake, preheat oven to 400°F (200°C). Place skewers on a baking sheet lined with parchment paper. Bake for 25 minutes, turning halfway through.
