
The contrast between the sweet, juicy watermelon and the salty, golden halloumi makes this dish a summer favourite. Served cold with a drizzle of lemon and a touch of fresh basil, it’s simple, satisfying, and perfect alongside our Grilled BBQ Platter!
Ingredients
- 200 g (1 pack) halloumi, sliced
- 1 small watermelon, peeled and sliced into triangles or cubes*
- 15 ml (1 tbsp) olive oil
- 30 ml (2 tbsp) lemon juice
- Fresh basil, to taste
Preparation
- Heat a non-stick skillet over medium-high heat. Cook the halloumi slices 1-2 minutes on each side until golden. Set aside and let it cool completely.
- Plate the watermelon, then top with halloumi, a drizzle of olive oil, lemon juice and basil. Serve immediately.
For best results, refrigerate the watermelon before slicing, and serve chilled.
Notes
Can be refrigerated up to 4 days. Does not freeze.
*1 small watermelon (6 lbs) yields about 8-9 cups cubed, without the skin. You can also use ½ medium watermelon, about 11 lbs.
