- 3–4 garlic cloves, minced
- 30 ml (2 tbsp) chili powder
- 30 ml (2 tbsp) extra virgin olive oil
- The juice of ½ lemon (or 30 ml / 2 tbsp)
- 10 ml (2 tsp) smoked paprika
- 2.5–10 ml (½–2 tsp) cayenne pepper, to taste
- 5 ml (1 tsp) salt
- 1 whole chicken (approximately 1.5 kg / 3.3 lbs)
Preparation
- Preheat the oven to 350°F (180°C). Remove any giblets from the chicken and pat it dry with paper towels.
- In a small bowl, combine the lemon juice, garlic, chili powder, olive oil, smoked paprika, cayenne pepper, and salt to make a paste.
- Rub the seasoning mix all over the chicken, including under the skin for maximum flavor.
- Place the chicken in a roasting pan and cook for 1 hour or until the internal temperature reaches 165°F (74°C) in the thickest part of the meat. Let the chicken rest for 10 minutes before carving.
