Ingredients

1 cup (250 ml) rolled oats

½ cup (125 ml) pitted dates

½ cup (125 ml) unsweetened vanilla almond milk

⅓ cup (80 ml) peanut butter

2 tbsp (30 ml) maple syrup

7 oz (200 g) dark chocolate

1 tbsp (15 ml) coconut oil
Preparation
- In a blender, combine the dates and almond milk, and blend until smooth.
- In a bowl, mix the date purée with the peanut butter, rolled oats, and maple syrup.
- Refrigerate for about 15 minutes to allow the mixture to firm up.
- Using your hands, shape the mixture into bite-sized pieces, pressing firmly to form rectangles.
- In a medium microwave-safe bowl, melt the chocolate with the coconut oil for 40 to 60 seconds, stirring every 20 seconds with a fork.
- Coat each rectangle in the melted chocolate and place on a parchment-lined tray.
- Refrigerate until the chocolate is fully set.
