Ingredients

  • 1 cup (250 ml) rolled oats  

  • ½ cup (125 ml) pitted dates  

  • ½ cup (125 ml) unsweetened vanilla almond milk  

  • ⅓ cup (80 ml) peanut butter  

  • 2 tbsp (30 ml) maple syrup  

  • 7 oz (200 g) dark chocolate  

  • 1 tbsp (15 ml) coconut oil

Preparation

  1. In a blender, combine the dates and almond milk, and blend until smooth. 
  2. In a bowl, mix the date purée with the peanut butter, rolled oats, and maple syrup.
  3. Refrigerate for about 15 minutes to allow the mixture to firm up. 
  4. Using your hands, shape the mixture into bite-sized pieces, pressing firmly to form rectangles. 
  5. In a medium microwave-safe bowl, melt the chocolate with the coconut oil for 40 to 60 seconds, stirring every 20 seconds with a fork. 
  6. Coat each rectangle in the melted chocolate and place on a parchment-lined tray. 
  7. Refrigerate until the chocolate is fully set.

Notes

Keeps for 10 days in an airtight container in the refrigerator or up to 3 months in the freezer.
