Crust
- 250 ml (1 cup) dates, pitted
- 125 ml (½ cup) walnuts or pecans
- 125 ml (½ cup) rolled oats
- 60 ml (¼ cup) unsweetened applesauce
- 5 ml (1 tsp) vanilla extract
- 1 pinch salt
Filling
- 2 large eggs
- 125 ml (½ cup) maple syrup
- 60 ml (¼ cup) unsweetened applesauce
- 5 ml (1 tsp) vanilla extract
- 30 ml (2 tbsp) all-purpose or gluten-free flour
- 30 ml (2 tbsp) ground chia or flaxseeds
- 60 ml (¼ cup) walnuts or pecans, chopped
Preparation
- Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking pan with parchment paper.
- In a food processor, blend the dates, nuts, and oats into a fine texture. Add the applesauce, vanilla, and salt, then mix until a smooth dough forms.
- Transfer the crust mixture to the pan and press firmly with the back of a spoon to create an even layer.
- Grind the chia or flaxseeds in a food processor.
- In a bowl, whisk the eggs with the maple syrup, applesauce, and vanilla. Stir in the flour and ground chia seeds, then fold in the chopped nuts.
- Pour the filling over the crust and bake for 30–35 minutes, until the center is set but still slightly soft. The squares will firm up as they cool while maintaining a soft texture.
- Let cool completely before unmolding and cutting into squares.
