Ingredients

Crust

  • 250 ml (1 cup) dates, pitted
  • 125 ml (½ cup) walnuts or pecans
  • 125 ml (½ cup) rolled oats
  • 60 ml (¼ cup) unsweetened applesauce
  • 5 ml (1 tsp) vanilla extract
  • 1 pinch salt

Filling

  • 2 large eggs
  • 125 ml (½ cup) maple syrup
  • 60 ml (¼ cup) unsweetened applesauce
  • 5 ml (1 tsp) vanilla extract
  • 30 ml (2 tbsp) all-purpose or gluten-free flour
  • 30 ml (2 tbsp) ground chia or flaxseeds
  • 60 ml (¼ cup) walnuts or pecans, chopped

Preparation

  1. Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking pan with parchment paper.
  2. In a food processor, blend the dates, nuts, and oats into a fine texture. Add the applesauce, vanilla, and salt, then mix until a smooth dough forms.
  3. Transfer the crust mixture to the pan and press firmly with the back of a spoon to create an even layer.
  4. Grind the chia or flaxseeds in a food processor.
  5. In a bowl, whisk the eggs with the maple syrup, applesauce, and vanilla. Stir in the flour and ground chia seeds, then fold in the chopped nuts.
  6. Pour the filling over the crust and bake for 30–35 minutes, until the center is set but still slightly soft. The squares will firm up as they cool while maintaining a soft texture.
  7. Let cool completely before unmolding and cutting into squares.

Keeps for up to 5 days in an airtight container in the refrigerator or up to 3 months in the freezer.
