Maple and Dijon Dressing

This perfectly balanced vinaigrette is ideal for adding to your salads, but can also be used as a marinade for meat or tofu. Feel free to double the recipe to save preparation time in the days to come. Enjoy!

  • 5 mL (1 teaspoon) garlic, minced
  • 1 small French shallot, finely chopped
  • 30 mL (2 tablespoons) lemon juice
  • 30 mL (2 tablespoons) Dijon mustard
  • Pepper to taste
  • 5 mL (1 teaspoon) dried rosemary
  • 45 mL (3 tablespoons) maple syrup
  • 15 mL (1 tablespoon) balsamic vinegar
  • 160 mL (2/3 cup) olive oil


  1. In a bowl, combine all ingredients except olive oil.
  2. Gradually add olive oil in a small stream while whisking vigorously to obtain an emulsion. For ease of use, use a hand blender.
