Ingredients

1 block (454 g) of extra-firm tofu

30 ml (2 tbsp) of cornstarch

15 ml (1 tbsp) of apple cider vinegar

10 ml (2 tsp) of paprika

5 ml (1 tsp) of garlic powder

Pepper, to taste
BBQ Sauce:

60 ml (¼ cup) of ketchup
-
30 ml (2 tbsp) of light soy sauce
-
20 ml (1 tbsp + 1 tsp) of maple syrup
-
15 ml (1 tbsp) of apple cider vinegar

5 ml (1 tsp) of mustard powder
-
5 ml (1 tsp) of paprika
-
5 ml (1 tsp) of garlic powder
Serving sauce (optional):

125 ml (½ cup) of 0% plain yogurt

45 ml (3 tbsp) of light feta cheese
-
15 ml (1 tbsp) of green onion, chopped
-
10 ml (2 tsp) of honey

The juice of ½ lemon (or 2 tbsp)
Preparation

Preheat the oven to 425°F (220°C).

Crumble the tofu into bite-sized pieces by hand and place in a bowl. Add the cornstarch, apple cider vinegar, paprika, and garlic powder, and mix to coat the tofu evenly. Season with pepper to taste.

Place the tofu pieces on a baking sheet lined with parchment paper or a non-stick baking mat. Bake for 25-30 minutes or until the pieces are golden brown, stirring halfway through.

Meanwhile, add the BBQ sauce ingredients to the same bowl and mix. In a smaller bowl, mix the side sauce ingredients, if desired.

Once the tofu is baked, toss it in the BBQ sauce until well coated. Return to the oven for 5-8 minutes.

Serve with the side sauce as an appetizer and/or with roasted vegetables and a salad for a meal.
