Ingredients

For the fruit garnish:

  • 1.5 L (6 cups) fresh or frozen cranberries
  • The zest of an orange
  • 125 ml (½ cup) or the juice of an orange
  • 30 ml (2 tablespoons) maple syrup
  • 30 ml (2 tablespoons) molasses**

For crispness:

  • 250 ml (1 cup) quick cooking oats
  • 125 ml (½ cup) almond flour (or ground almonds)
  • 125 ml (½ cup) whole wheat flour
  • 125 ml (½ cup) brown sugar
  • 125 ml (½ cup) pecans, coarsely chopped
  • 60 ml (¼ cup) canola oil
  • 30 ml (2 tablespoons) maple syrup
  • 10 ml (1 teaspoon) ground cinnamon
  • 10 ml (1 teaspoon) vanilla extract
  • 2.5 ml (¼ teaspoon) salt

Preparation

  1. Preheat oven to 350°F (180°C).
     
  2. In an 8" x 12" (20 cm x 30 cm) baking dish, combine cranberries, orange zest and juice, maple syrup and molasses.
     
  3. In a bowl, mix all the ingredients for the crispy crust.
     
  4. Spread the crisp mixture over the cranberries.
     
  5. Bake for 30 to 35 minutes or until crisp is golden brown and cranberries are easily crushed with a fork.
     
  6. Serve warm or at room temperature with ice cream or yogurt, if desired.

*For a less tart taste, you can add a few extra tablespoons of maple syrup.

**If you don't have molasses on hand, you can substitute it with an equivalent amount of maple syrup without any problem.
