Ingredients

  • 1 pork tenderloin, about 400 g (14 oz)
  • 45 mL (3 tbsp) ketchup
  • 45 mL (3 tbsp) apple cider vinegar
  • 30 mL (2 tbsp) Worcestershire sauce (or soy sauce)*
  • 15 mL (1 tbsp) water
  • 15 mL (1 tbsp) Dijon mustard (or whole-grain mustard)
  • 15 mL (1 tbsp) maple syrup
  • 10 mL (2 tsp) BBQ spices (or Cajun seasoning)*
  • 3 to 5 drops liquid smoke (optional)
  • 1 yellow onion, finely chopped
  • 1 garlic clove, finely chopped

Preparation

  1. Place the pork tenderloin in the slow cooker. Add all the ingredients.
  2. Gently stir to coat the tenderloin in the sauce.
  3. Cover and cook on low for 6 hours (or on high for 4 hours) until the pork is tender and easy to shred.
  4. Once cooked, shred the pork directly in the slow cooker using two forks. Mix well with the sauce.
  5. Serve as desired: in tacos, with grilled vegetables, or in a meal bowl.

Notes

Keeps for 3 days in an airtight container in the refrigerator or up to 3 months in the freezer.
