Ingredients

  • 2 tbsp (30 ml) whole wheat flour  

  • 1 tbsp (15 ml) almond flour  

  • 2 tsp (10 ml) brown sugar  

  • ¼ tsp (1 ml) baking powder  

  • ½ tbsp (7.5 ml) egg white  

  • 2 tbsp (30 ml) 2% milk  

  • ¼ tsp (1 ml) vanilla extract  

  • ⅓ cup (85 ml) fresh or frozen blueberries

Preparation

  1. In a small bowl, mix the flours, brown sugar, baking powder, and egg white until a sticky dough forms. 
  2. Stir in the milk and vanilla until smooth. 
  3. Place the blueberries at the bottom of a mug with at least a 250 ml (1 cup) capacity, and pour the batter over the top. 
  4. Microwave for 1 to 2 minutes*, or until a knife inserted in the centre comes out clean. Let cool for 5 minutes before enjoying.

Notes

Keeps for 3 days in an airtight container in the refrigerator. Can be frozen for up to 3 months.

 

* Cooking time may vary depending on your microwave's power. Start with 1 minute, watching to prevent overflow, then cook in 30-second intervals as needed.
