Ingredients
- Olive oil spray
- 1 to 2 onions, finely chopped
- 30 ml (2 tbsp) maple syrup
- 4 large eggs
- 60 ml (¼ cup) 2% milk or unsweetened plant-based beverage
- 60 ml (¼ cup) light cheese (under 20% M.F.), shredded
- 2 slices of ham, diced (optional)
- Salt and pepper, to taste
To serve:
- Seasoned Hash Browns
- Green salad or fresh fruit
Preparation
- In a skillet over medium heat, spray a little oil and sauté the onions for 2–3 minutes.
- Add the maple syrup and cook for 5 minutes, stirring occasionally, until the onions are well caramelized. Set aside.
- In a bowl, whisk the eggs with the milk, then stir in the cheese and ham (if using). Season with salt and pepper.
- In the same skillet, spray more oil and pour in the egg mixture. Cook over low heat until the omelet is almost set.
- Top with the caramelized onions, fold the omelet in half, and finish cooking to the desired texture.
- Serve with hash browns, a green salad, or fresh fruit.
Notes
Best enjoyed fresh, but keeps for up to 3 days in an airtight container in the refrigerator.
