Ingredients

  • Olive oil spray
  • 1 to 2 onions, finely chopped
  • 30 ml (2 tbsp) maple syrup
  • 4 large eggs
  • 60 ml (¼ cup) 2% milk or unsweetened plant-based beverage
  • 60 ml (¼ cup) light cheese (under 20% M.F.), shredded
  • 2 slices of ham, diced (optional)
  • Salt and pepper, to taste

Preparation

  1. In a skillet over medium heat, spray a little oil and sauté the onions for 2–3 minutes.
  2. Add the maple syrup and cook for 5 minutes, stirring occasionally, until the onions are well caramelized. Set aside.
  3. In a bowl, whisk the eggs with the milk, then stir in the cheese and ham (if using). Season with salt and pepper.
  4. In the same skillet, spray more oil and pour in the egg mixture. Cook over low heat until the omelet is almost set.
  5. Top with the caramelized onions, fold the omelet in half, and finish cooking to the desired texture.
  6. Serve with hash browns, a green salad, or fresh fruit.

Notes

Best enjoyed fresh, but keeps for up to 3 days in an airtight container in the refrigerator.
