Ingredients

Shortbread base 

  • 375 ml (1 ½ cup) almond flour
  • 30 ml (2 tbsp) ground flax seeds  
  • 15 ml (1 tbsp) canola oil 
  • 15 ml (1 tbsp) maple syrup 
  • 5 ml (1 tsp) vanilla extract
  • 1.5 ml (¼ tsp) salt 

Peanut caramel 

  • 160 ml (⅔ cup) natural peanut butter 
  • 15 ml (1 tbsp) canola oil 
  • 5 ml (1 tsp) vanilla extract
  • 1.5 ml (¼ tsp) salt 

Chocolate topping 

  • 60 g (2 oz) dark chocolate, 85% 
  • Sea salt, optional

Preparation

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shortbread ingredients until a dough forms.
  3. Press the dough evenly into a loaf pan using your fingers. Bake for 10 minutes. Allow the crust to cool for 10 minutes before adding caramel.
  4. In a small pot, heat the caramel ingredients over medium heat until smooth. Pour the caramel over the shortbread layer, then refrigerate for 60 minutes.
  5. After chilling in the refrigerator, melt the chocolate in the microwave for about 90 seconds, stirring every 30 seconds. Pour the melted chocolate over the caramel layer. If desired, sprinkle the chocolate with cracked sea salt.
  6. Freeze for 10 minutes.
  7. Once chilled, cut into 16 bars and enjoy!

Notes

Store in the refrigerator for up to 4 days or freeze for up to 3 months.
