Dietitian Approved

  1. In a saucepan, melt the margarine over low heat and add the spices. Stir for about 1 minute.
  2. Add the barley and stir to coat well.
  3. Add stock and bring to a boil over high heat. Stir.
  4. Reduce heat to medium-low, cover and simmer for 35 minutes or until the liquid has completely evaporated and the grains are tender.
  5. Season with salt and pepper, if desired, then serve.


Nutritional Information per serving:

  1. In a small skillet, pour oil and heat over medium-high heat.
  2. Sauté the bell pepper for about 4 minutes or until well roasted.
  3. Add garlic and spices and cook for 2 minutes. Keep stirring.
  4. Pour in the tomato coulis and mix well.
  5. Break the egg in the center of the pan, directly over the preparation.
  6. Cover and cook for 4-6 minutes depending on the desired texture of the egg.
  7. Garnish the Shakshuka with green onion and fresh herbs.
  8. Serve with toasted multigrain bread, if desired.
